Chicken Involtini with Arugula, Fresh Mozzarella & Bacon

Involtini is an Italian word for rolls. And Chicken Involtini is the word for SUPER yummy grilled chicken alternative.

Seriously though, this recipe is not your ordinary way of cooking chicken, but I promise, you’ll be surprised how fast and easy it is.

And on top of all, De-li-cious.

Without further ado let’s see what is the fuss I’m talking here all about 🙂

Serves: 2

Ingredients:

8 thin slices of chicken fillet

8 slices of bacon

1 cup arugula leaves

2 pcs of fresh mozzarella cheese

Salt and Pepper to taste

Preparation:

Step 1: Lay chicken slices flat on a cutting board lengthwise. Place arugula leaves followed with a slice of mozzarella cheese on the top. Sprinkle with freshly ground pepper.

Step 2: Roll chicken slices up forming a tight roll. Wrap a bacon slice around each chicken roll.

Step 3: Grill on a high heat, flipping your involtini as they cook. Once golden brown reduce the heat and cook for a few more minutes (around 10-12 minutes total).

Serve with mixed greens salad, polenta or steamed vegetables.
