These tuna stuffed deviled eggs are one of the easiest and delicious appetizers you can make even last minute!

- Eggs - use the most fresh eggs you can get, possibly free range.
- Tuna - good quality canned tuna, drained.
- Capers - pair perfectly with tuna and add incredibly depth of flavor you wouldn't have otherwise. Even if you're not a fan of capers, you won't mind them in this recipe, promise.
- Mayo - good quality mayo to help the egg filling come together. You can add adjust its quantity slightly to get the desired consistency.
- Tortilla Chips - to make sail boats.
You'll also need salt and vinegar for boiling the eggs. I'll explain why below.

Follow these step by step instructions to make tuna stuffed deviled egg sail boats. A printable recipe with precise ingredient measurements follows below.
Step 1: Boil Eggs
- Arrange eggs in a pot. Fill with cold water covering 1" above the eggs and add salt and vinegar to prevent the eggs from cracking and leaking during cooking.
- Bring to a boil then cover pot with a lid. Turn down the heat and cook for 10 minutes.
- Immediately after cooking, cool the eggs in a cold water and ice bath for at least 10 minutes.
While eggs are still cooling in the water tap each egg with a spoon to make a small crack. This will help you peel the eggs easily.
Step 2: Prepare the eggs
- Peel the eggs, cut in half lengthwise.
- Remove eggs yolks and place them in a blender cup.
Step 3. Prepare the filling
- Add tuna (previously drained), capers and mayo to the egg yolks.
- Blitz with a blender until smooth. Taste and adjust for salt, pepper. If needed add a bit more mayo. The consistency should be thick enough to pipe the filling.
Step 4: Stuff the eggs
- Place the filling in the pastry bag.
- You can use a decorating tip or simply pipe it from the cut off angle of a zip-lock bag.
- Pipe a generous amount of filling in egg halves. Before serving decorate with tortilla chips.
If you’re not planning to serve them immediately, place the eggs in a deep dish and cover with plastic wrap.
Store in the fridge until ready to serve.

Ingredients
For tuna deviled eggs
- 8 eggs
- 3 oz tuna (85 grams)
- 2 teaspoon capers
- 5-6 tablespoon mayo
- 1 pack of tortilla chips
