It’s a little less alcoholic than the classic version. It’s delicious served from the freezer and slowly sipped from a liqueur glass. Strawberry Cream Liqueur also great for topping ice creams.

Ingredients
- Strawberries - use the most fresh, bright red color strawberries. Those bought at the farmer’s market or grown in your own garden are the best. It’s very important that strawberries smell and taste great, since this will directly impact the taste of your final strawberry liqueur. Blunt taste strawberries simply will not pass any flavor to the liqueur, so as strawberries color will impact color of your strawberry liqueur.
- Alcohol - pure grain alcohol 190 proof/ 95% vol such as Everclear Grain Alcohol 190 Proof or Spirytus Wesoly 192 Proof.
- Sugar Syrup (made with sugar and water) and/or Cream Syrup (made with sugar, whipping cream and milk).
How To Make With Pictures
Prepare Strawberries
Rinse strawberries under cold running water.
Drain, pat dry with a paper towel and let air dry for a few more minutes.
Remove the stems and cut each berry into small dices. As an alternative you can cut them in thin rounds.
Place strawberries in a glass jar with airtight closing and pour in the alcohol. It’s very important that all strawberries stay covered with alcohol. If needed you can either remove a few strawberry pieces or add just a little bit more of alcohol.
Leave To Macerate
Let macerate for 10 days. It’s possible to macerate strawberries for as little as 5 days up to 20 days.
When you’re ready to make strawberry liqueur, prepare the syrup at least a few hours in advance.
Prepare Sugar Syrup and/or Cream Syrup
In a pot add water and sugar and bring everything to a boil. Mix well making sure all sugar is dissolved. Let cool completely.
If you want to make strawberry cream liqueur mix whipping cream, milk and sugar in a pot. Bring to a boil. Let cool completely. Place in the fridge for a few hours (optional but recommended).
Add Sugar Syrup or Cream Syrup
Strain strawberries macerated in alcohol. Lightly press with a spoon to extract all the liquid.
If you want to prepare only classic strawberry liqueur make sure to double the syrup and once it’s completely cool mix with strawberry alcohol.
In case you’re preparing both classic and creamy version, first divide strawberry alcohol in 2 equal parts. By weight you should get approximately 450 grams total or 225 grams for each of the liqueurs.
In one part of strawberry alcohol pour sugar syrup, in the other preferably chilled creamy syrup.
Mix well and bottle in sterilized glass bottles.
Top Tips For Making Strawberry Liqueur & Strawberry Cream Liqueur
- Use the most ripe, fresh strawberries. They should be bright or deep red in color. But pay attention they’re not over ripe as overripe strawberries might be spoiled and will ruin your liqueur.
- The size of the strawberries is not important. In fact, a lot of times small strawberries will have more flavor. The most important things is that the strawberries are fresh and firm to touch.
- Any strawberries that started to soften or turn a burgundy/brown-ish color should not be used to make the liqueur.
- You can choose to strain strawberry liqueur for the second time but I don’t find it necessary.
- You can prepare sugar syrup and especially creamy syrup the night before bottling your strawberry liqueur.
- It’s highly recommended to chill cream syrup overnight or at least for a few hours before making Strawberry Cream Liqueur. This way you’ll get a smoother liqueur in terms of texture.
- If you Strawberry cream liqueur tends to have a little uneven texture simply blend it in a food processor or with a blender.
- It’s also normal for strawberry cream liqueur to separate after a few hours. In this case vigorously shake the bottle until combined and serve.
How Strong Is This Strawberry Liqueur?
With this recipe you’ll have a pretty strong liqueur, about 34-35% abv or 68-70 Proof perfect to sip slowly from a liquor glass. It also won’t freeze if stored in the freezer. You can always make it milder by adding extra sugar syrup.
How To Store
Classic Strawberry Liqueur can be stored at room temperature in a dark place. But it’s best keep in the fridge or in the freezer for a few hours before serving as it tastes best when chilled.
Strawberry Cream Liqueur should be stored in the freezer since it’s creamy parts makes it more delicate. It also thickens in the freezer so that you can almost eat with a spoon. You can take it out of the freezer a few minutes before serving to make it a little more fluid and easier to pour.

- 500 ml alcohol 190 Proof , 95 ABV
- 1 lb fresh strawberries

- ¾ cup water (180 ml)

For Creamy Syrup
- ¾ cup sugar (165 g)
- ¾ cup whipping cream (180 ml)
- ¼ cup cup whole milk (60 ml)
