Italian Homemade Pasta

Pasta Fresca is a term used in Italian cuisine that is used to distinguish homemade and handmade pasta from packaged dried pasta.

Even though it's not rare to find pasta fresca in supermarkets sold in the refrigerator aisle, most commonly it's the type of pasta made at home with flour (fine 00 flour or remilled semolina) and eggs or water. It's usually cooked the same day or frozen.

Here you'll find some of the most popular and easy to make homemade pasta types such as egg-based  pappardelle, eggless cavatelli, so as homemade stuffed pasta like ravioli and tortellini.

Gnocchi and some other traditional homemade pasta types like passatelli also belong to pasta fresca category.
