The perfect brunch sandwich not only has to be fast&easy to make. In my eyes, it should be super filling and seriously delicious.
Just like this Italian prosciutto, mozzarella and arugula panino.
Sweet cured Italian meat - prosciutto with a bit spicy, peppery arugula salad and fresh juicy mozzarella cheese it’s already a perfection. But if you go one step further to make your own homemade panini bread - it’s heaven on earth.
Promise.
Makes 2-3 sandwiches
Ingredients:
1 pack/ 3oz prosciutto crudo (cured raw Italian ham)
1 pack/2 cups fresh arugula
2 fresh mozzarella balls, sliced
2-3 panini bread (homemade ciabatta bread works perfectly for this)
Extra virgin olive oil
Salt to taste
Preparation:
The beauty of this sandwich is that it literally takes close to zero prep time.
Of course if you opt-in to make your own homemade panini bread, it’s a bit more than that. But time spend with this bread will pay off 10x no only in this quick and delicious panino recipe but even if sprinkled just with an olive oil.
As to panino, you now have all the ingredients ready.
All you need to do is slice mozzarella balls and assemble your sandwich.
How to assemble a panino sandwich:
- Cut the bread in half lengthwise.
- Drizzle generously on the inside with extra virgin olive oil.
- Add slices of prosciutto.
- Add generous handful or two of arugula salad.
- Add fresh mozzarella slices and a pinch of salt.

Fresh, meaty and crispy panino sandwich is ready.
There is even no need for the sandwich press or oven toast. This panino tastes perfectly just the way it is. But you can certainly let fresh mozzarella melt under a panino press and boy, hold on there. It makes me drool just from thinking of it.
